Bone Broth

Roast marrow bones at 400°F, then simmer with water, salt for 24 hours. Strain.

- Beef Marrow Bones2 lb
- Water8 cups
- Salt1 tbsp
Steps
- 1Preheat oven to 400°F (200°C). Spread marrow bones on a baking sheet.
- 2Roast bones for 30 minutes until browned — this deepens the flavor.
- 3Transfer roasted bones to a large stockpot. Add 8 cups cold water and 1 tbsp salt.
- 4Bring to a gentle simmer (not a rolling boil). Skim any foam from the surface.
- 5Simmer on lowest heat for 20-24 hours. Add water if level drops below bones.
- 6Strain through fine mesh sieve. Cool and refrigerate — fat cap on top is liquid gold.
